Taco Beef With Rice & Greens



PREP. TIME: 10 MIN | COOK TIME: 20 MIN | SERVES: 3


INGREDIENTS

  • 1 tbsp olive oil

  • 1lb extra lean ground beef

  • 1 tbsp taco seasoning

  • ½ cup salsa

  • ¼ cup water


  • 1 cup rice, raw = 3 cups cooked

  • Chicken broth, amount according to rice directions


  • 3 cups green - salad or sliced cucumbers (a great side is the dill pickle salad from costco)


  • ½ cup (60g) cheddar, grated



DIRECTIONS Rinse rice and combine rice & chicken broth in rice cooker. Set a medium pan on medium/high heat. Once hot add 1 tbsp olive oil, and set the beef in. I like to break the beef into 4 chunks in the pan to get some more surface area and brown crispy bits. Let cook for 4 minutes, once browned a little, flip and break up a little bit more. Let sit for another 5 minutes. Add spices, mix into beef. Once the spices are throughout the beef add the salsa & water. Stir and once hot turn off heat. Divide rice (1 cup per meal) & beef mixture into 3 containers, top with cheddar and add vegetables or prepared salad on the side.
