Greek Pasta Salad with Chicken

INGREDIENTS
130g raw pasta
1 large chicken breast
Drizzle of olive oil
Salt & pepper
Cajun, lightly seasoned
1 cucumber
3 roma tomatoes
¼ red onion, optional
1 tbsp olive oil
½ lemon, juiced
½ tbsp apple cider vinegar
1 garlic clove, minced
1 splash olive juice
1 ½ tsp dried oregano
Salt & pepper
60g feta
DIRECTIONS
Start by putting on a pot of water on high heat. Lid on. Until it comes to a boil. Add salt & pasta. Cook according to directions on the package. Once done, strain, rinse and put in the fridge/freezer to cool!
Large dice the cucumber & roma tomato. Add to a large bowl along with the following ingredients. Mix and taste to see if you would like to add anything else!!
Cook chicken. Set a cast iron pan on high heat. Cube chicken into large bite size pieces, drizzle olive oil and sprinkle salt, pepper & cajun on it. Coat. Add to the pan once hot and cook for a couple minutes per side.
Once the pasta has cooled add it to the bowl along with everything else (except for the chicken).
Divide into 2 meals, top with chicken. You can either serve the chicken warm later, or mix it in with everything!!
