PREP. TIME: 10 MIN | COOK TIME: 10 - 22 MINS | SERVES: 2
INGREDIENTS
● 1 chicken breast, leftover or baked
● 1 cup pasta sauce
● 1⁄2 cup cottage cheese
● 3 tbsp franks, or more depending on how you like it
● 2 tbsp water
● 1⁄4 tsp garlic powder
● 1 1⁄2 cup broccoli, or other green vegetable
● 2 cups rotini pasta
● 2 tbsp parmesan
DIRECTIONS
Chicken: this is a perfect dish for leftover chicken. Or you can bake the chicken breast. Coat breast in olive oil, salt & pepper. Bake at 400 for 18-22 minutes, depending on size. Or until the internal temperature reaches 165 degrees. Fill a medium saucepan with water and bring to a boil. Once boiling add pasta, stir, and set timer for what the package says, make sure to stir a couple times while cooking. While pasta is cooking, make sauce, combine pasta sauce, cottage cheese, franks, water & garlic powder in a blender. Blend until smooth. Prepare broccoli by slicing into bite sized pieces. When pasta is 1 minute away from being done add broccoli into water. Strain everything and add sauce to the same saucepan along with the strained noodles and broccoli.
Divide into two meals. Top with parmesan.
