Cajun Chicken Meal Prep

INGREDIENTS

  • 2 chicken breasts

  • 1 tbsp olive oil

  • Splash lemon juice

  • 1 tbsp cajun seasoning

  • 5-10 potatoes, depending on size, cubed

  • 2 tbsp olive oil

  • 2 tbsp italian seasoning

  • 1 tbsp paprika

  • Salt & pepper

  • 2 small/medium heads broccoli

  • 1 pepper, yellow or red

  • 2 tsp olive oil

  • Salt & pepper

PREP. TIME: 15 MIN | COOK TIME: 35 MIN | SERVES: 4


DIRECTIONS Set the oven to 425 degrees. Cube potatoes into bite sized pieces and put into a bowl filled with cold water. Let sit while you prepare chicken. Put chicken onto a lined sheet tray, drizzle olive oil and lemon juice over it, flip to cover. Sprinkle cajun seasoning and massage into chicken. Bake for 22 minutes or until internal temperature reaches 165 degrees fahrenheit. Wash your hands. :) Drain potatoes and dry off with a clean kitchen towel, dry the bowl as well. Add potatoes back to the bowl and drizzle on olive oil and sprinkle italian seasoning, paprika, salt & pepper. Toss until combined. Bake for 35 minutes, flipping halfway through. Prep broccoli & peppers by cutting into bite sized pieces, adding to the same bowl the potatoes were in, drizzling with olive oil, salt & pepper. Once chicken is done, add broccoli & peppers to that same tray and bake broccoli for remaining time of potatoes (about 5-10 minutes).
