BBQ Chicken Quesadilla with Arugula & Apples

INGREDIENTS

MAKES 2 HALF QUESADILLAS

  • 2 Tortillas

  • 1 large chicken breast, cooked

  • 1 tbsp bbq sauce

  • ½ granny smith apple, sliced

  • 1 cup arugula

  • 2 tbsp pickled jalapenos, sliced

  • ½ cup cheddar cheese, shredded


PREP. TIME: 15 MIN | COOK TIME: 25 MIN | SERVES: 1 or 2


DIRECTIONS Lay 2 tortillas out, spread ½ tbsp of bbq sauce on each half of each tortilla. Top with sliced chicken and sliced apple, then arugula, spread sliced jalapenos over top & top with cheese. Fold the other half of the tortilla over. Cook on medium/low heat in a large pan until warmed and browned. Flip and do the same on the other side, don’t rush the process, we want the cheese nice and melted! *I have done the calories per quesadilla (one tortilla folded in half) . If you want to make a larger quesadilla just put everything into two flat tortillas and double the calories and macros! :)
